What's for dinner: Penne a la Kim

My good friend Kim from 3 Peanuts shared this recipe with me. I fixed it for dinner this week, and it was so good!

Penne a la Kim

1 bunch of cilantro leaves, chopped, stems discarded (Kim's note: I use most of the leaves from the grocery store bunch but we like cilantro...most people would be happy with about 2 tablespoons chopped...you can use basil if you do not like cilantro, but it will not be quite as good :) , Eloise's note: I used the leaves from about half of a bunch of cilantro because I got bored of pulling the leaves and chopping them before I could finish the entire bunch)
16-oz. penne pasta, cooked al dente and drained
8 oz. herbed feta cheese, crumbled
1 jar of sun-dried tomatoes in oil, sliced into small pieces (do not discard the oil!)
2-3 chicken breasts

Marinate the chicken breasts for a few hours in your favorite marinade. (Kim's note: I use Newman's Own Italian dressing). Grill then slice into pieces.

Combine the cilantro, feta cheese, sun-dried tomatoes and oil in a large bowl. Add drained hot pasta and grilled chicken. Stir to combine. Serve hot or cold. Enjoy!

I served this pasta hot with a simple salad of baby spinach and sliced strawberries drizzled with balsamic vinegar* and olive oil and topped with a grind of fresh black pepper and sea salt. It was so good!

*My friend Pattie sent our family a bottle of Di Bruno Bros. balsamic vinegar for Christmas last year. I've always bought *good* balsamic vinegar from William-Sonoma, but the Di Bruno is incredible!

That looks so good. I'll have to try it....and I love cilantro. My family is divided on cilantro. There was quite an argument after cilantro was added to the guacamole once...to this day it is referred to as The Great Cilantro Incident of 2002.

I never knew how good feta could be (I only ate it if it appeared on something, never bought any) until a Greek store opened near me and yowza. The feta is AMAZING. She put mine in brine in a container and told me to keep it covered in brine and it will keep for three months!

That looks fantastic! I love pasta with a simple oil on it, rather than some heavy cream sauce. I will have to try this for sure! :)
