My Cooking Club kicked off its 5th year with a gathering at my friend Karey's house. As always, we enjoyed some delicious food! We are winding down with the Junior League of Houston's wonderful cookbook Peace Meals. Does anyone have any suggestions for our next cookbook?
My assignment this month was the appetizer. I brought these Maple Salmon Bites which were a big hit (I also served these at my last Valentine luncheon. See recipe here.)
Other selections were (clockwise from bottom): Texas Corn Pudding, Crab Cakes with Avocado Salsa, Spinach Tortellini Casserole and Greek Quinoa Salad. We also enjoyed Southwestern Chicken Soup (top right above my plate)
Dessert was Frozen Margarita Pie - fabulous
After our meal we discussed what each person had brought and made notes in our cookbooks. Notice how much we enjoyed the dessert!
I can't believe how many posts I have missed.... I am glad Vivian's tubes and port are out... your son Will is absolutely adorable... your entire family is... husband included (totally meant in a complimentary and non creepy way!) And your salmon appetizer sounds amazing... would you care to share the recipe?
As always, it looks like a delightful and delicious luncheon! I think all the Junior League cookbooks are great. Have you looked at Tables of Content by the JL of Birmingham, Alabama? Another favorite cookbook of mine is Compliments Of, by The Woman's Exchange of Memphis.
I think Peace Meals is such a lovely cookbook. The JL cookbooks never disappoint. One of my personaly favorites is the River Road cookbook from the JL of Baton Rouge. There are some great recipes in it! (It's pretty much a staple in every home in SOuthern Louisiana.)
You must try Boca Raton JL Savor the Moment. It is by far my favorite JL cookbook and I have many. If never disappoints. I have been in the same JL dinner club for 11 years. When we started we were provisionals and single. Now we are all sustainers and very busy with families. But we have kept the club all women so we have our much needed girls night!
Married since 1987 to Robert, three grown kids: Will, Vivian, and Dots, one granddaughter: Charlotte ~~~~
Majored in mathematics at SMU, taught elementary school for six years before Will was born, currently tutoring math ~~~~
Things I enjoy: playing duplicate bridge, working NY Times crossword puzzles, reading good books, entertaining, visiting with friends, planning trips, traveling, playing board games, spending time with family, working Liberty jigsaw puzzles, cooking, keeping up with old friends ~~~ happy to correspond with other parents about raising a child with special needs
I unintentionally contaminated all of the pictures on my blog when I changed my privacy settings on Flickr. I am working backwards to correct them all, but it is quite a tedious procedure! If you encounter a post with error messages from Flickr where the pictures should be, then I haven't gotten to that post yet. Please let me know and I will update it immediately. Thanks for your patience!

Looks delish...I will have to try the salmon appetizer and should really buy Peace Meals...everything sounds great.
Your cooking club sounds like so much fun! I would love it, as it would force me to try out new recipes.
I swear I am moving there and joining your club!
