Things we love: Oatmeal Crisp cookies.

We are iced in here at Casa Weasel. Day Two of no school, so Dots and I decided to bake cookies!

These oatmeal cookies were favorites of my sister and brother and me growing up, and they are also much beloved by my children. Dots also insisted that we make them last weekend when we were hosting our mother/daughter book club here because they are always a huge hit with her friends as well.

The dough is refrigerated in rolls wrapped in waxed paper

One recipe makes 2-3 rolls like this

After the dough is chilled, you simply slice and bake - very easy and much quicker than drop cookies. I use the convection setting on my oven and bake three cookie sheets at one time

Oatmeal Crisps

1 cup Crisco shortening
1 cup brown sugar
1 cup sugar
2 eggs
1 teaspoon vanilla
1½ cups flour
1 teaspoon salt
1 teaspoon baking soda
3 cups quick-cooking Quaker Oats (sometimes I use regular Quaker Oats if that is what I have on hand and I can't tell any difference)

Cream shortening and sugars then adds eggs and vanilla. Sift together flour, salt and soda then add to mixing bowl. Stir in oats.

Form dough into rolls. Wrap in waxed paper and chill thoroughly. Slice and bake 10 minutes at 350° (325° for convection).

Makes approximately 8 dozen cookies.

***Someone asked if I thought she could substitute butter for the Crisco. Absolutely! The cookies will just be flatter.***

Oatmeal cookies are my all time favorite!! This just made my day.

I hate that every time you find oatmeal cookies in stores or bakeries, they have raisins in them. Yuck!!

I will def. be making these.

The cookies look delicious, and sounds like you and the girls had a great time making them. This cold weather makes me want to spend time baking in the kitchen. Only problem is no one here to help me eat the results, and I don't need to eat it all! Stay safe and warm. Sounds like tomorrow is another no school day again!

I have a go-to never fail recipe for oatmeal cookies, too--definitely my family's favorite (I add chocolate chips). I was just thinking that I'd bake some today because Judson is coming home for the weekend. Don't you love snow days, especially when you live where we don't get them often? They're like a gift from God (as long as the power doesn't go out!)

Eloise, these look fabulous!! One question though...do you think you could substitute butter for the Crisco? Or do you think that would mess something up in these?

Tony's favorite cookies are oatmeal...but these look like a fun new twist on the oatmeal cookie! I'll be making these for sure. Sorry about the crummy weather...

Oh Eloise, I just made these today and they are WONDERFUL! This is definitely a keeper and I know I'll use it again and again! I didn't end up substituting the butter for Crisco because I had to go to the store this morning anyway so I just picked some up. Good to know that is an option though. What a yummy and easy recipe! Thanks for sharing!!
