What's for dinner: Summer Orzo Salad

I am setting new records for blog negligence. I am finally making some headway on my needlepoint stocking, however, and that's a very good thing!

I found this recipe on the Cooking Forum at GardenWeb.com several years ago. It is delicious and perfect for summer evenings. You can vary it by adding or deleting ingredients (I usually add grilled chicken).

Summer Orzo Salad

1 box orzo pasta
1 large red onion, chopped
1 green pepper, chopped
1 yellow pepper, chopped
1 can artichoke hearts, coarsely chopped
1 container grape tomatoes, halved
1 cup (+ /-) feta cheese, cut into small cubes
1 cup mixed fresh olives, coarsely chopped
½ bottle Paul Newman Balsamic Vinaigrette salad dressing

Cook pasta; rinse with cold water; drain and toss with the salad dressing. Add all other ingredients except feta cheese. Mix well. Then toss in feta cheese. (Adding the feta last helps it to stay white). Serve cold. Better the next day.
